It can mean "to smile", "luxuriant", "gentle", "soya", "rustling sound of the wind", "health", etc. This name is best known for being the name of the Dutch actor Soy Kroon (b. 1995). He stated in a 2008 interview with the regional newspaper Eindhovens Dagblad that he was named after his father (who is named Jos), but in a creative way. His parents simply reversed Jos into Soj and then altered the spelling a little bit (possibly in order to make the name a bit more visually appealing). Soy can be used as a first or middle name for girls or boys. It is common for parents to give their children names that signify positive traits they want their child to possess.
